Ingredients:
– 250g of cornstarch cookies;
– 100g of melted unsalted butter;
– 700g of cream cheese at room temperature;
– 1 and 1/4 cups of sugar;
– 1 tablespoon of vanilla extract;
– 4 eggs;
– 1/4 cup of freshly squeezed Sicilian lemon juice;
– 1/4 cup of fresh heavy cream.

1. Preheat the oven to 180°C.
2. Crush the cornstarch cookies until they form a fine crumb. Add the melted butter and mix well.
3. Line the bottom of a springform pan with the biscuit mixture, pressing it down firmly with a spoon.
4. Bake in the oven for 10 minutes.
5. Beat the cream cheese and sugar in a mixer until smooth.
6. Add the vanilla extract and the eggs, one at a time, beating well after each addition.
7. Add the Sicilian lemon and the cream and beat a little more.
8. Pour the cream cheese mixture over the biscuit base and bake for about 45 to 50 minutes. When done, the surface should be firm to the touch, but the center still soft.
9. Remove from the oven and let cool completely before unmolding and serving.
